Abstract | The carbon dioxide production of medium-grain rough rice was determined at 10, 15, 20, 25, and 30% moisture content wet basis and at temperatures of 10, 20, 30, 40, and 50 °c. Experimental tests were performed on continuously aerated samples on a 24 hr basis at 8 hr intervals. Chemical absorption techniques -were found to be a reliable and convenient means of carbon dioxide production measurement. Results of the study point to strong interactive effects between percent moisture content and temperature in the respiratory process of rough rice. Percent moisture content appears to be the controlling factor in the dry matter loss of the rough rice samples. Tests on prolonged time durations were also performed to investigate dry matter loss trends as related to mold growth and eventual deterioration of the grain. Safe storage periods were estimated in accordance with the findings of this study. |
