Abstract | This is a study of the effects of environmental conditions on breakage during milling of rice . This relates to milling yields. Long grains of the Supan 60 variety, freshly harvested and from a 6 months old storage, were used for the experiment. The initial moisture content of fresh rice and old rice were 1 3 . 4% ( w. b.) and 1 2. 1 % < w. b.), respectively. The study was conducted in two parts. Experiments in the first part were performed on a Satake Testing Miller, inside an environment ally controlled room. The results revealed that the head yield of both fresh and old rice decreased with increase of temperature in the mill room in the range of from 20°C to 35°C. The higher head yield was obtained under 70 % to 80 % of RH in 20°C to 25°C of temperature. The most optimum RH values were 78 % and 73 % for fresh rice and old rice, respectively. Old rice had a lower head yield than fresh rice, but had a little higher total yield than fresh rice. The second part of this study relates milling yield to the tempering treatment during the milling process. The result indicated that with tempering treatment during 2 passes or 3 passes milling process, the temperature rise in the grain during mil ling could be reduced 3. 5 to 4. 5 °c and the head yield found to increase about 1 % for both fresh and old rice compared with none tempering treatment . No definite relation could be found to relate total yield with tempering treatment. |
